If you want the best pelts then one-shotting with varmint rifle is best I believe. otherwise one-shotting with another rifle gives second best. multiple shots reduce the quality quickly. I tried that, I picked up a worn double barrel shotgun early on in the game and tried replacing it with a pristine double barrel shotgun that I found but the pristine one disappeared out of my weapon wheel soon as I got back on my horse, leaving me with just the worn one V2gZ.
